We carry a nice selection of herbs year around. All of our herbs are available in a value priced 2½" pot. Following is a list of our usual selection of herbs. Availability may vary during different parts of the year. Basil (annual) Comes in many different varieties which differ in flavor, leaf color, texture and growth habits. Most varieties range between 12-24" tall. Fresh basil is one of the most widely used herbs. It is used in pesto, pizza, chicken dishes and many others. Catnip (perennial) A sure way to keep you cat happy! grows 2-3 feet tall. Also used to make tea.
Chamomile Best known for the tea made from dried flowers. There are two types. Both help speed the process of composting. Roman (perennial) Ground cover 6" tall. German (annual) 24" tall.
Chives (perennial) Reach about 12" tall depending on variety. They have white flowers. Good with baked potatoes, cheese and egg dishes. We carry the following varieties: garlic medium-leaved
Cilantro (Coriander)(annual) Grows to 24" tall. Best when used fresh, as it loses most of its flavor when dried. Coriander refers to the seed, which has a lemon/sage taste and is used in stews, bean dishes, and some pastries. Cilantro refers to the leaves, which are good in salsas, guacamole, salads, soups, and marinades.
Dill (annual) Grows 18-48" tall. The most common variety is dwarf fern leaf (only 18" tall). You can use both the seeds and leaves with potatoes, dressings, saucess, fish, and pickling. Dill is also useful in calming an upset stomach.
Lavender (perennial) Makes a tasty tea! also, because the smell is repugnant to bugs, it is useful in linen closets, etc. lavender is also said to ease tension, headaches, insomnia, and skin irritation English or Munstead Lavender is the most common. It grows as a rounded shrub up to 18" tall. Spanish Lavender 12" tall with unusual, spiky flowers.
Marjoram (annual) Grows 12" tall. Use in meat dishes, salads or tea.
Mint (perennial) Most varieties are extremely vigorous with a mounding/spreading habit. Mints can be used in teas, desserts, ice cream, chocolate, cheese cake etc. We carry several varieties including the following: Chocolate Lime Orange Peppermint Spearmint
Oregano (perennial) Grows 12-18" tall and wide. Tasty in tomato sauces, marinades, roasts and bean dishes among others. Also handy in treating indigestion, headaches and joint/muscle pain.
Parsley (biennial) A biennial plant produces vegetative growth the first year, and flowers the second year. Once the flowers are produced the leaves are not desirable for cooking and eating. Parsley grows 6-12" tall. Although it is most commonly used as a garnish, parsley is also used in soups, egg dishes, and sauces. Curled Leaf More decorative Italian plain More intense flavor
Rosemary (tender perennial) Grows up to about 24" (some varieties taller). Rosemary is more drought tolerant than other herbs. It produces either blue or pink flowers depending on the variety. Tasty in meat dishes (especially lamb), vegetable, and potato dishes.
Sage (perennial) Grows to 24" tall and spreads up to 36" wide. Sage is most often used in stuffing for meat and poultry but is also used in cheese dishes and many Mediterranean foods.
Tarragon (perennial) The most common variety is French Tarragon. It grows up to 24" tall. Tarragon is good in a variety of dishes such as eggs, chicken, lamb, fish and butter/cream/cheese sauces.
Thyme (perennial) The varieties known as garden or common Thyme are the most widely used and grown. Thyme grows 6-12" tall and wide. It is excellent with poultry, fish, pork, and many sauces.
